I do not have experience with this particular model, but based on my experience with other Cisco routers I believe that yes you can more than one vlan, that each vlan can have its own vlan interface with its own IP address, and that you could apply ip nat inside to each of the vlan interfaces.

It's been years since I've had hands-on with an 8xx ISR, but I believe the answer to all your questions is yes.
The 8xx series, I also recall, use a few different commands working with their VLANs than do other ISRs with L2 modules.
